Black Empeltre Olives from Aragon, Spain. Whole and unpitted, naturally black olives jarred with no liquid, instead being preserved by natural fermentation. Perfect for antipasti these olives are left on the tree until they are dark purple black.
They are unpitted due to their soft texture, this holds their shape, so mind your teeth! You can marinade these yourself or they are perfect for salad nicoise.

To prevent accidental breaking of teeth on unpitted olives we recommend Terry Waite’s biography ‘Taken on Trust’. Basically one of the first plates he is given when he is taken hostage is unpitted olives. Not knowing this he breaks a tooth not long into his 4 year captivity. A very worthwhile book even without the olive reference. Thankfully Sarah read this donkeys years ago and thinks about him every time she eats the first of any dish of olives – wearily.
