Description
Fregula Sarda Pasta is a speciality pasta product from Sardinia shaped like little balls. It is made with coarse semolina, then toasted to give
it a lovely nutty flavour. Delicious with seafood and in salads, soups and casseroles. But you can also be creative with couscous recipes and Fregula, after all couscous is also pasta.

Making Sardinian fregola requires some skill. There is an old Sardinian proverb that goes ‘Koiaimì ca sciufai frégula’ meaning ‘give me a husband, because I know how to make fregula’! Interestingly, in the past, it was an important dowry requirement for women! How times change! These days it’s probably just as well to buy it.
