Zaytoun Green Wheat Freekeh is durum wheat (like bulgur wheat), which is harvested whilst still green, then flame roasted, giving it a smoky flavour, the husks are then rubbed off.

Like bulgur wheat Zaytoun Green Wheat Freekeh retains excellent texture after cooking making it great for salads, risotto and pilaf. It pairs well in recipes with lemon, thyme, za’atar and feta. And works well as an accompaniment to meat dishes, such as slow cooked goat and lamb.

This wonderful recipe for Freekeh and Leek Pilaf from Zaytoun is similar to a dish we have been making for years with bulgur wheat. You can use chicken stock instead of water for a more gut friendly dish.
