
Roasted New Potatoes with Italian Herbs is such a simple dish with very few ingredients, all of which can be bought in our shop. We serve these in the deli as part of our salads, which we sell individually or as a mixed salad box. When you are entertaining keeping things easy not only gives you time to enjoy yourself, but it is also more likely to please your guests. In the past we’ve spent days preparing dinner for friends, but nowadays we don’t have the time or the energy.
The Italian Herb mixes are excellent value and also a really quick and easy way to transform a tin of chopped tomatoes into a pasta sauce. If you have a little more time use some lovely IOW Tomatoes (available in our shop in all colours, shapes and sizes) and simmer to your heart’s content. You can add more garlic if you prefer. We’ll add that recipe another time.
New Potatoes Roasted in Italian Herbs are equally great cold for a picnic or served hot with Italian meatballs or Porchetta. You could also serve them as part of an antipasti board to add a few carbs for unexpected guests! Bulk it out baby!
Ingredients
1kg midi or new potatoes
1 tbsp Italian dried herb mix Arrabiata, Piccantissimo or Bruschetta, depending how spicy you like it
Good glug of olive oil, such as The Tomato Stall Extra Virgin Olive Oil
A sprinkling of nice salt.
Serves 4 people
Method
- Pre heat the oven to 180 ° fan oven.
- Throw your potatoes into a glass bowl, cut any larger ones into bite size chunks.
- Pour over the oil and sprinkle with the Italian herbs and salt and mix with a big spoon.
- Transfer into a good roasting tray for veg and roast for about 30 minutes. If you like you can then add a little more salt. Serve hot or cold
