Description
Ras al Hanout by Seasoned Pioneers is a Moroccan 15 spice blend, which translates as ‘head of the shop’ ie the best parts. Ras al Hanout, like many spice blends will vary from region to region, family to family, but this one will impress you. Top quality ingredients, as usual from Seasoned Pioneers, make this a game changer for your spice cupboard. But don’t leave it in there. Get it out and use it! Easy uses are making a marinade with olive oil and salt or roast lamb or goat (just add oil!), or again add some oil and mix into a selection of vegetables before roasting them.
Go a little further and make a lamb or goat tagine with honey and dates (it’s just a casserole, don’t be scared). We always like to add aubergine or a firm squash to our tagine. You don’t need a tagine pot, you can use a normal lidded casserole. Tagines are very simple when you can cheat with excellent spice blends.
Delia Smith featured Seasoned Pioneers’ Ras-el-Hanout in her ‘How to Cheat at Cooking’ cookbook. See page 123 for her Moroccan Chicken with Preserved Lemons and Chickpeas.
