Description
Gluten Free Tagliolini. 250g. Long, flat strips of pasta made with just Corn flour. Whilst it does sound a little like tagliatelle, the ‘ini’ at the end sounds ‘smaller’ to me. They are thinner strips than tagliatelle, a little more delicate.
It therefore lends itself to lighter sauces. Made simply with garlic mushrooms, spinach and some Truffle Oil is perfect for this pasta. Vegetarian and gluten free. Or just lemon and butter. It couldn’t be simpler, yet it remains classy.
Sugo D’Arrosto is the heaviest of the sauces used for Gluten Free Tagliolini. A sauce made from roasted meat drippings. NOT beef dripping, which is cooled and hardened beef fat. This is the juice or jus.
A great, simple, but impressive tagliolini dish is Pasta with with Creamy Saffron. Using our saffron powder would make it also very affordable.
Tagliolini is nicely sized for kids. I think our niece Alice, who is obsessed with pasta and butter would be very happy, as would Stanley Tucci’s daughter Millie, as he talks about in his book ‘What I Ate in 1 Year and Related Thoughts‘.
Origins and Further Ideas
Tagliolini is from Liguria, a region known for its simple foods, vegetables, seafood and herbs. Simple, yet very exciting!
This would explain the simplicity of the tagliolini dishes. Some really interesting dishes haul from Luguria, like Easter Pie – spinach and egg pastry. Cappon Magro, s a seafood and vegetable salad, Faranata, which is a chickpea pancake.
The more I delve into Italian food the more excited I get, but I also think maybe life is not long enough to try all of these lovely things! Italian food is so often thought of as pasta and pizza, but it is so much more. Where do you begin, as I don’t think there’s an end.
A couple of things you are more likely to have heard of are pesto and focaccia. Both from Liguria. This makes perfect sense. Tagliolini and pesto are the perfect, simplest, easiest combination. We like to make our own with rocket and toasted pumpkin seeds. It is a cheaper alternative to fresh basil. Or just use our Organic Pesto.
