Korean Kimchi is a traditional Korean dish made from fermented vegetables, usually cabbage and radishes, with chilli peppers, garlic, ginger and other seasonings. It is a staple in Korean cuisine and is often served as a side dish. There are many different recipes, as they are usually made at home with everyone’s handed down recipes and secret tips. This one is a chunkier version than some with a nice kick.

To make kimchi, the vegetables are cut into pieces and seasoned with a mixture of salt, garlic, ginger, and chili pepper flakes, then left to ferment for a period of time to enhance the flavour and nutritional benefits.

Kimchi is not only delicious but also nutritious. It is low in calories and fat and is a good source of fibre, vitamins and probiotics due to the fermentation process. Probiotics are beneficial bacteria that promote a healthy gut.

In Korean culture, kimchi holds a special place and is often considered a symbol of Korean cuisine. It is served with almost every meal and is also used as an ingredient in various dishes, such as kimchi fried rice and kimchi stew. It also goes well with fish, such as salmon.
